Roasted green agaric mushrooms (Northern Thai food)


Khua or phat het lom requires the green mushroom as the main ingredient. It has a nice aroma and great taste for many northerners. The mushroom is stir-fried with a little oil and browned or fried garlic with some seasoning to taste. It is one of the outstanding local dishes for the rainy season.  Ingredients
1. Green agaric mushroom 1 Cup 
2. Minced pork 50 Gm. 
3. Green Chili spur pepper 2 
4. Shallots 3 
5. Garlic 5 Cloves 
6. Shrimp paste 1 Tsp. 
7. Salt 1/2 Tsp. 
8. Chopped Garlic 1 Tbsp. 
9. Vegetable oil 2 Tbsp.   
 Cooking Method
1. Pound together chili, shallots, garlic and shrimp paste until pulverized.
2. Add grilled mushrooms and pound some more.
3. Brown the garlic and stir fry with pork.
4. Stir in chili paste and fry until cooked. Turn off stove.
Tips on cooking
Grill the mushrooms to give them a good aroma and flavor.
Tips on selecting ingredients
Fresh mushrooms can be uses as well.
